The olive trees are located above the medieval village of Arquà Petrarca, the second most beautiful village in Italy. At a height of about 300 m above sea level, on volcanic soil the olive trees find a perfect micro-climate. 70% of the olive grove (with some centuries-old trees) is made up of the “Rasara” cultivar, which is the most used olive for the production of our gold-green, a native plant, historically cultivated in the volcanic soils of the Euganean and Berici hills, between the provinces of Padua and Vicenza. The remainder of the cultivar is composed of other varieties such as Leccino, Frantoio and Pendolino.

The time has come to introduce ourselves: we are Federico and Filippo, osteopath and engineer, both nature
lovers. Committed to our activities, every day we have invested our free time in our passion. The goal is to make our exclusive product to be known not only to friends but also to anyone who wants to value the dedication of two boys under 30 who love genuine products. Our past as former rugby players has taught us determination, respect and sharing, values we put into practice in everything we do. Since 2017 we have decided to manage the family olive grove. Last year, 2020 has begun our olive growing adventure. Over the years we have cared for and brought our olive trees to their splendor with annual pruning and organic fertilization.

The processing of the olive

The harvest is done by hand from us with the help of some friends, exclusively in October, the best time to enhance the quality of the oil. Our olives undergo a daily processing: harvested, cleaned from the leaves and pressed all during the day. In this way we do not give the possibility that the olive gets damaged but we enhance
the freshness of our green gold to the fullest. The milling is carried out at zero kilometer, a few hundred meters from the olive trees, at our friends of the Evo del Borgo oil mill. Thanks to cold extraction, an exclusively mechanical process, we are able to guarantee all the qualities of our beloved EVO.
